Potatoes and Scallions

2 lb. red 'new' potatoes, all equal in size
1 cup scallions, white parts and 3 inches of green, minced
1 tbsp. butter
1/4 tsp. nutmeg
salt and pepper to taste
1 cup nonfat plain yogurt


Quarter but do not peel potatoes. Cook in salted water until tender. Drain and dry over heat in pan.

In a skillet, cook scallions in the butter over medium heat for 1 minute or until soft. Do not brown.

Mash potatoes. Add cooked scallions and remaining ingredients. Serve.
