Grilled Flank or Skirt Steak Mandarin

1 - 2 tsp garlic, minced
1 - 2 tsp fresh ginger, minced
2 scallions, chop fine
3 T light soy sauce (or Kikkoman)
1 t or more sugar to taste
1 t Asian sesame oil
splash dry sherry
salt and pepper to taste
chili flakes or cayenne or sambal oelek to taste

Marinate at least 3 hours up to overnight (less for pork or chicken). Grill to desired doneness.
