Shish Kabob Marinade
1/2 c. oil
1/8 c. lemon juice
1 tsp. salt
1 tsp. marjoram
1 tsp. thyme
1 tsp. basil
1/2 tsp. pepper
1 clove garlic, minced
1/2 c. chopped bell pepper (optional)
1/4 c. parsley flakes or snipped parsley
Mix all ingredients together. Marinate meat overnight in refrigerator or 3 hours at room temperature. Cover. Toss occasionally.
Beef Kabob Marinade
1/2 c. oil
2 Tbsp. red wine vinegar
1 clove garlic, minced
2 Tbsp. Dijon mustard
1 tsp. salt
1/4 tsp. pepper
2 lb. beef, cut into
1 1/2-inch cubes
Combine oil, red wine vinegar, garlic, mustard, salt and pepper well.
Add beef and marinate at least 2 to 3 hours.
Broil in oven or grill on skewers with mushrooms and sliced zucchini, basting with marinade occasionally.
