Ginger-Rum Marinade

Amount Measure Ingredient -- Preparation Method

1/2 cup unsweetened pineapple juice
1/3 cup light rum
1/4 cup soy sauce
1 tablespoon grated gingerroot
2 cloves garlic -- minced
1 tablespoon brown sugar
1/4 teaspoon ground red pepper


Combine all ingredients. Makes about 1-1/4 cups, enough for 1-2 lbs. of poultry or seafood.
