Lime-Garlic Marinade
(for pork or chicken)

2-2 1/2 lbs. meat (chops, tenderloin, chicken)
1/2 c. chicken broth
1/3 c. lime juice
2 T. olive or cooking oil
1 T. brown sugar
3 cloves finely chopped garlic
1/4 t. dried red pepper flakes
1/2 t. dried crushed mint (optional)
Marinate meat in plastic bag for 6-24 hrs. in fridge, turning bag occasionally. Reserve marinade while grilling meat (directly over med/hot coals). Brush meat with marinade until last 5 minutes of cooking time.
