Jerky Marinade
1/2 c soy sauce
1/2 c Worcestershire sauce
2 tbsp catsup
1 1/4 tsp salt
1/2 tsp pepper
2 tbsp sugar (brown or granulated)
1 clove garlic, mashed well
1/2 tsp onion powder
2 lb lean meat, cut into strips
Marinade (refrigerated) for at least 1 hour before dehydrating.
Sweet and Sour Jerky Marinade
1/2 c red wine vinegar or balsamic
1 tsp garlic powder
2 tsp salt
3/4 c pineapple juice
1/2 c brown sugar
1/4 c soy sauce
1/4 tsp ground ginger
3 lb lean meat cut into strips
Mix together. Marinate meat for at least 6 hours, refrigerated, stirring occasionally.
Spicy Jerky Marinade
6 tbsp oil
1 c soy sauce
6 tbsp brown sugar
3 tbsp sherry
2 tsp finely minced garlic
3/4 tsp ground ginger
a few drops of Tabasco, optional
3 lb lean meat
Marinate for at least 6 hours (in refrigerator).
Hot Jerky Marinade
2 tsp chili powder
2 tsp dried garlic powder
2 tsp dried onion powder
2 tsp pepper
2 tbsp salt
1 tsp brown sugar
1/2 tsp cayenne
1/2 to 1 tsp liquid smoke
1 c water
2 lb lean meat, cut into strips
Marinate meat for at least 6 hours, in refrigerator.
