Bacon: Garden Frittata

Garden Frittata

4 slices bacon
1 large onion (chopped)
1 1/2 cups vegetable of the season
6 eggs
1 1/2 cups Swiss cheese (grated)


Brown bacon in 11" skillet and reserve - remove most of drippings.

In remaining dripping, saute onions. Add crumbled bacon and lightly steamed vegetable of the season. Add beaten eggs. Top with Swiss cheese. Place a lid on skillet and allow to cook on low heat until nearly set.
Finish under broiler in oven until top is brown.

Serves 6
