Bacon: Hobo's Salmagundy

Hobo's Salmagundy - (An Authentic Hobo Dish)

3 or 4 slices of bacon, cut into 1/2 inch pieces long
potatoes, peeled and diced
1 or 2 onions, peeled and diced
1 or 2 raw eggs
water, optional
salt, optional
pepper, optional


Fry the bacon pieces until crisp. Add in the potatoes and the onions. Stir the mixture well and fry in the bacon grease until crisp brown. Add in the eggs and stir until the eggs are done and well combined with the other ingredients. (Optional: Add in water if you desire and let boil for 5 or 10 minutes until done. Add in salt and pepper.)

Cooking Note: You can mix any several things that you want together and fry until everything is done and then add a little water and let the mixture boil five or ten minutes until done. Make sure that you season any food that you cook with salt and pepper.

Additional Note: There is a variation of the recipe name that is called "Solomon Gundy".

Personal Notes: Quite often, Hoboes cook Salmagundy and other unusual meals while being on the road.

Hobo Food Slang:
Blue-John = skimmed milk
Punk = bread
Toppings = pastry
Gun Boat = Empty can used for cooking which is usually a coffee can.
Work the stem = Try to get food handouts from food businesses.
Handout = Food that is not wrapped that is given to a person. Knee-shaker = Food handout that is given on a plate at the back door of a house. Person eats it on backsteps of a house while the plate is balanced on the person's knees.
Lump = A packaged meal to be taken on the road.
Sit-down = A meal that a person can sit down to at a table.
Specks = Fruit that has specks on it.
Pearl Diver = dishwasher
Kitchen Dog = Kitchen Prep Worker
