Beef Appetizer: Reuben Roll-Ups

Reuben Roll-Ups

2 pkgs. (8 oz. each) refrigerated crescent rolls
1 pkg. (2.5 oz.) corned beef, chopped
1/2 cup sauerkraut, drained, squeezed dry and chopped
1/4 cup Thousand Island dressing
1 cup (4 oz.) finely shredded Swiss cheese


Preheat oven to 375 F. Unroll crescent dough; separate into 8 rectangles. Press perforations together to seal.

Spread about 1 1/2 tsp. dressing evenly onto each rectangle; top with chopped corned beef, sauerkraut, and cheese. Starting at shortest side, roll up each rectangle, jelly roll fashion; press seams together to seal. Cut each roll into four 1 inch thick slices. Place cut sides down on a 15" round baking stone.

Bake 20-22 minutes, or until golden brown. Serve warm with additional Thousand Island dressing for dipping, if desired.

Yield: 32 roll-ups
