BBQ Beef Sandwiches

4 lb. beef sirloin roast very very lean
2 large onions chopped
1 cup water
1/2 cup apple cider vinegar
1 cup ketchup
1/2 cup Worcestershire sauce
1/4 cup brown sugar
2 Tblsp. dry mustard
1 tsp. salt
1/4 tsp. ground red pepper
2 Tblsp. minced garlic
1/2 tsp. cayenne pepper
1/4 cup soy sauce
1/4 tsp. black pepper


Preheat oven to 325 degrees F. Put roast in roasting pan.

Mix all the rest of the ingredients in a pan and bring to a boil. Pour over roast and roast slowly in oven at 325 for about 3 1/2 hours, covered. Make sure it doesn't go too dry. If it does get dry, add a little water. Roast must be very tender and falling apart with the touch of a fork. Shredd the roast and mix well.

This can be done in a crock pot too. Just cut the roast in pieces so it fits in the crock. It won't dry out that way, but it might be a little to wet for sandwiches. If this happens stick it in the oven for a little too and it soons thickens up.
