Barbecue Brisket

1 brisket -- 5 lb.
1 teaspoon salt
1 teaspoon pepper -- freshly ground
1 onion -- chopped
2 stalks celery
1 cup chili sauce
1 cup water
1/4 cup parsley -- chopped
1 beer -- 10 oz. bottle
Preheat oven to 325 degrees F.
Remove most of fat from brisket. Wash and dry. Sprinkle with salt and pepper.
Place meat fat side up in heavy casserole. Cover with onion, celery, chili sauce, water and parsley. Bake, uncovered, in 325 oven for 1 hour. Pour beer over and bake, covered, for 3 more hours or until tender.
Cool to room temperature, refrigerate, skim off fat, slice and reheat in sauce.
