Basil Stuffed Beef

1 (3 lb) boneless beef sirloin roast, about 2 inches thick
1/4 tsp salt and pepper
2 cups packed fresh basil leaves torn or chiffonaded
10 cloves garlic, minced (2 T)
2 tsp olive oil


Make 5 slits along the top of the sirloin not cutting through it but enough to make long pockets.

Combine basil, garlic and olive oil and mix. Stuff into slits in meat. Season with salt and pepper. Tie meat with string so it is holding in basil but not in a roll.

Bake in 400 degree oven for 15 minutes and then lower temp to 350 to desired doneness. 140 degrees for rare (about 35 minutes), 155 for med, 165 for well done. Set aside and let rest for 10 minutes before slicing. Slice into slices and serve.
