Boruf en Daube
1 1/2 lbs. round beef
3 strips bacon
Flour
1 clove garlic
1 cup red wine
2 bay leaves
1/2 tsp. salt
6 small onions
1 1/2 cups diced carrots
4 peppercorns (or pepper)
4 whole cloves
1 cup boiling water
Preheat oven to 300 degrees F.
Cut beef into cubes. Cook bacon until lightly brown but not crisp. Drain and cut into one inch pieces.
Dredge beef in flour.
Brown in bacon fat to which garlic has been added. Remove garlic and add water, wine and salt. Bring to a boil. Put into a baking dish; add bacon and remaining ingredients.
Cover and bake 2 to 2 1/2 hours at 300 degrees or until tender.
