Beef Braciole

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds flank steak -- pounded thin
2 cloves garlic -- minced
1/4 cup parsley -- chopped
1/4 cup Parmesan cheese -- freshly grated
1/2 teaspoon salt
1/8 teaspoon black pepper -- freshly ground
1/3 cup olive oil
basil
mint
oregano
salt and pepper -- * to taste
4 egg -- hardboiled


Cover steak with garlic, parsley, cheese, eggs, salt and pepper. Roll up jelly roll style, tie with cotton string.

Heat oil thoroughly and brown meat on all sides. Add tomatoes and seasonings. Cover skillet. Simmer about 1 hour or until tender. Do not overcook.

Place on serving platter and slice. Freezes well.
