Burgundy Brisket
1 Brisket
3 Tablespoons bacon fat
2 medium onions, sliced
1 beef bouillon cube dissolved in 1 cup boiling water
2 Tablespoons flour
1 Tablespoon Kitchen Bouquet
1 generous squirt of tomato ketchup
1/2 teaspoon thyme
1/4 teaspoon garlic powder
1 cup burgundy
1 Tablespoon sherry
salt and pepper to taste
Brown beef in bacon fat and remove. Saute sliced onions until transparent. Return meat to pan. Mix rest of the ingredients and pour over meat.
Simmer, covered for 3 hours until tender. Small potatoes and carrots may be added the last 30 minutes. Also sliced mushrooms are a good addition.
