Beef Casserole: Spinach and Ricotta Manicotti

Spinach and Ricotta Manicotti

1 lb. ground beef
1 egg
1 lb. ricotta cheese
1 lb. mozzarella cheese - shredded - reserve about 1 cup
1 small can spinach - well drained
20 manicotti noodles or a large box shells for stuffing


Preheat oven to 375 degrees F. Brown meat and drain. Put in a mixing bowl and add ricotta, mozzarella, egg, and spinach. Mix all together. Season with a little salt and pepper.

Cook and drain either manicotti noodles or large shells (shells are a lot easier to stuff). Put a layer of spaghetti sauce in the bottom of a baking pan. Stuff pasta and lay in pan. Cover pasta with a layer of sauce and sprinkle with mozzarella. Cover with foil and bake at 375° for 20 minutes.
