Tamale Casserole

1 lb. ground beef
1 cup chopped white onion
1 (16 oz.) can chopped tomatoes
1 (16 0z.) can whole kernel corn
2 tsp. chile powder
4 tsp. salt
3/4 cup cornmeal
1 (4 oz.) can ripe pitted black olives (optional)
1 cup grated cheddar cheese


Preheat oven to 350 degrees.

Brown the ground beef. When almost cooked, stir in onion and cook until onion is translucent. Add tomatoes, corn, chile powder and salt. Heat to boiling. Slowly stir in cornmeal. Reduce heat, cook over low heat for 10 to 15 minutes, stirring to prevent sticking.

Cut olives into large pieces, stir into tamale mixture.

Spray a 2 quart casserole with nonstick cooking spray, pour in the tamale mixture. Sprinkle cheese on top, bake at 350 degrees for 30-40 minutes.
