Beef: Cheeseburger Macaroni

Cheeseburger Macaroni

1/2 pkg (2 to 3 cups uncooked) elbow macaroni
1 pound ground beef
1/2 medium onion, chopped
1 clove garlic, minced
1 (15 ounce) can tomato sauce or tomato sauce with onion and green pepper
1 cup cubed Velveeta
salt and pepper, to taste


Cook macaroni according to package directions. Brown hamburger with onion, chopped, and garlic. Drain.

On medium high heat, tomato sauce. Add cooked and drained elbow macaroni. Add cubed Velveeta. Stir frequently to help Velveeta melt and to prevent sticking or burning. After adding the cheese, turn the heat down to medium and watch it closely. Add salt and pepper to taste.

Serve with green beans and a fruit salad. Play with this recipe by adding green peppers with the onions and garlic or using Mexican flavored tomato sauce or Rotel tomatoes instead of the plain tomato sauce.
