Chicken Fried Steak

4 (4-6 oz.) minute or cube steaks
2 eggs, beaten
2 tablespoons milk
1 cup all-purpose flour
Salt and pepper to taste


Combine eggs and 2 tablespoons milk. Beat with fork till mixed. Dip steaks, one at a time, in flour mixture then in egg mixture. Redip in flour.

Place on a clean sheet of waxed paper or plate and set aside. Place 2 tablespoons of oil in an electric skillet or large, heavy skillet. Heat the vegetable oil over medium heat (360 degrees in an electric skillet.) Tilt the skillet back and forth to completely cover the bottom with the oil.

Add 1 tablespoon of butter; melt and spread over the bottom of the skillet. Brown in oil 4 minutes on one side and then 4 minutes on other side. Serve with gravy over steak, mashed potatoes, etc.

Gravy:
In a container that has a lid mix:

1/4 cup + 2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 cups cold milk


Place lid on jar and shake above mixture till well blended.

Reduce heat in electric skillet to 220 degrees (or if using regular skillet, reduce heat to low.) To the drippings and crispies that are left in the skillet add 1 1/2 cups milk to deglaze the skillet stirring constantly.

Increase temperature of electric skillet to 350 degrees (in regular skillet medium to medium-high) and add milk and flour mixture. Stir constantly till mixture begins to boil. Serve.
