Corned Beef and Cabbage
5 pounds corned beef brisket.
salt and pepper to your taste
1 medium to large onion
4-5 large potatoes
4 large carrots
1 small cabbage cut into wedges (at least 4)
Put your corned beef in a large pot, cover with water and simmer on low heat for approximately 2 hours.
Peel and cut vegetables into thick slices
Drain off the water, refill the pot with fresh cold water and add the salt and pepper to your liking, and the vegetables
Cook until the vegetables are almost cooked add the cabbage at this point. Add some more salt and pepper(if wanted) and cook for approximately 15 minutes
