Cranberry Roast

3 lb. Sirloin Tip Roast
3 cloves garlic, minced
1 cup cranberries chopped finely
1/2 cup chopped parsley
1 tsp. lemon zest
Cranberry chutney


Preheat oven to 500 degrees.

Rub roast with garlic. Combine next three ingredients and rub roast with the cranberry mixture. Place on rack in roasting pan.

Bake uncovered at 500 for 10 minutes. Reduce heat to 350 and bake 50 minutes for medium degree of doneness.

Slice Roast Beef across the bias of the grain. Garnish with chutney.
