Beef Enchilada Pie

1 lb. ground beef
1 cup onion, chopped
2 cloves garlic, finely chopped
2 tsp. chili powder
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
8 oz. (225 g.) bottle taco sauce
2/3 cup finely crushed tortilla chips
2 cups shredded cheddar cheese
1 1/4 cups milk
3 eggs
3/4 cup biscuit baking mix


Heat oven to 400° F. Grease a 10 inch pie plate.

In a large skillet combine ground beef, chopped onion and garlic; cook and stir until brown. Drain, then stir in chili powder, oregano, salt, pepper and one half the taco sauce; set mixture aside.

In pie plate, sprinkle crushed tortilla chips, 1 1/2 cups cheese and beef in layers.

In a small bowl, beat milk, eggs and biscuit mix until smooth. Pour over the beef mixture in pie plate. Bake for 25 to 30 minutes or until a knife inserted in the center comes out clean.

Spread remaining taco sauce over top and sprinkle with the remaining cheese. Bake until the cheese melts (about 3 - 5 minutes). Cool for 10 minutes.

Serve with chopped tomatoes, shredded lettuce and sour cream or plain yogurt if desired. Serves 6 - 8
