Fiesta Manicotti

1 pound ground beef
1 pkg. dry taco seasoning mix
3 cups salsa (divided)
1 pkg. manicotti shells (about 10-12 shells)
3/4 cup shredded cheddar cheese
3/4 cup shredded Monteray Jack cheese (or use 1 1/2 cups shredded Mexican/taco cheese)
1 cup sour cream
1 (2 1/4 oz.) can sliced black olives, drained


Preheat oven to 350. Saute beef in frying pan until browned; drain and reserve.

Cook manicotti shells according to package directions; drain and set aside.

Meanwhile: spray a 9 x 13 baking dish with Pam. Spread 1 cup salsa evenly on bottom of dish; set aside.

Stir taco seasoning mix and one cup salsa into reserved beef.

Fill each manicotti shell with meat mixture. It takes about 2 tablespoons or so of meat to fill each shell. Place filled manicotti in baking dish.

Pour remaining one cup of salsa over shells. Sprinkle with cheeses. Cover loosely with foil.

Bake 30 to 45 minutes or until cheese is melted and manicotti is heated through.

For garnish, spoon one tablespoonful over sour cream on each manicotti and sprinkle with black olives.

Note: lean ground sirloin and reduced/nonfat cheese products work well.
