Flank Steak

1/2 cup malt vinegar or balsamic vinegar
1/4 cup olive oil
1/2 cup chopped red onion
1/4 teasp pepper
1 flank steak, about 1 1/4 lbs.


Combine vinegar, oil, onion and pepper in plastic storage bag. Score the steak in a diamond patter on both sides. Add the steak to the marinade in the bag. Expel excess air, seal and place in a pan. Let stand for 30 minutes. Turn over and marinate for another 30 minutes. Remove from marinade.

Adjust the broiler pan 4-5 inches from the source of heat. Preheat broiler.

Broil steak for 5 minutes. Turn over and broil for another 5 or 6 minutes for rare. Serve hot or make ahead and serve chilled.
