Beef Florentine

Crust:
3 cups flour
1 tsp. salt
1/4 cup butter
1 cup shortening
1 egg beaten
1 Tblsp. vinegar
1/4 cup water


Mix first 4 ingredients until pea size. Add liquid ingredients and mix together until it holds a ball. Divide and line 9 inch pie plate with half the dough. Do not bake. Set aside remaining crust dough.

Meat Mixture:
1/2 cup chopped bacon, cooked until crisp, drain off fat
1 lb. ground beef, brown and drain
1 tsp. garlic powder (in Gilroy we use fresh, of course)
1/2 cup chopped onions
1 cup sliced mushrooms
1 (10 oz.) pkg. frozen spinach, thawed and well drained


Cook Meat, drain, and add garlic powder, onions and mushrooms. cook until most of the liquid is gone. Remove from heat and add the spinach.


Sauce:
1-1/2 Tblsp. butter
1-1/2 Tblsp. flour
1 cup half and half
1/4 tsp. salt
1/8 tsp. nutmeg
1/2 cup. Parmesan cheese


Melt butter; add flour and stir until smooth. Add remaining ingredients and continue cooking, stirring constantly, until sauce is thick and smooth. Add to beef mix. Fill crust with beef mixture and top with remaining crust. Brush with beaten egg and sprinkle with Parmesan cheese. Bake 40 minutes at 350. Let stand 15 minutes before serving. Serves 7.
