Beef: Goulash by Sparkie

Goulash

2 - 3 lbs. stewing beef cut into 1" cubes
1/4 cup corn oil
1 cup chopped onions
1 clove garlic, finely chopped
1 (28 oz.) can of tomatoes
1 cup of water
2 beef bouillion cubes
1 tbsp. paprika
pinch of cayenne
1/2 tsp. salt
pinch of pepper
1 1/2 cups potatoes (cut in 1 inch cubes.)
1 cup chopped green pepper
1/2 cup sour cream


Brown the meat in the corn oil. Remove and place in a 3 1/2 quart casserole. Saute the onions and garlic until soft but not browned, then add the meat in the casserole. Add the tomatoes, and water. Stir in the bouillion cubes, salt, pepper, paprika, cayenne. Cover and cook in a 350 degree oven for 2 hours.

Add the potatoes and pepper and continue cooking for another hour or until the meat is tender. Stir in the sour cream, heat through but do not allow to boil.
