Grandma Serena's Braciole
4 cloves garlic, crushed
1/4 cup freshly grated Parmesano or Romano cheese
1/3 cup fine bread crumbs
1/4 cup pignoles (pine nuts)
1 medium egg beaten
1/4 cup white raisins soaked in 2 tablespoons white wine**
1/4 cup chopped fresh flat leaf parsley
3 pounds sirloin steak, pounded thin and cut into 8 pieces
4 tablespoons extra virgin olive oil
1/2 cup red onions sliced into "c" shapes
salt and fresh ground black pepper to taste
1 1/2 pounds uncut macaroni
2 quarts spaghetti sauce
1/2 cup white wine
In a small bowl combine the first 7 ingredients and stir till all is coated with the egg. Put a small amount of filling in the middle of each of the pieces of steak. Roll up much like a burrito and seal with either butchers string or plain unwaxed dental floss.
Heat the oil in a deep skillet and place the meat packets in. Brown on all sides, making sure not to pierce the meat but turn with tongs. Add the onions and continue to cook for another 15 minutes. Add the spaghetti sauce and season with the salt and pepper. Add the white wine and let simmer for 30-45 minutes, till meat is tender.
While this is simmering cook and drain the macaroni. Keep warm in a colander over a steaming pot of water.
To serve: untie the beef and serve 2 per person over macaroni with a generous helping of sauce. Extra Parmesan may be sprinkled over the top for additional flavor.
**The wine that the raisins are soaked in should be used in the sauce, it gives the sauce an extra uumph! along with the rest of the wine.
