Grilled Beef Rolls with Soy Dipping Sauce

1 cup soy sauce
1/2 packed brown sugar
2 lbs beef tenderloin, well trimmed
Kosher salt and black pepper
4 scallions, green tops cut into 3 inch lengths and sliced lengthwise; whites cut into 1/8 inch rings
3 bell peppers, one red, yellow and green; juliened into matchstick slices
1 tsp olive oil


In a small bowl whisk together first two items. Set aside. Cut tenderloin crosswise into 1/4 inch slices and trim. Pound out slice keeping it in a rectangular shape until 1/8 inch thick. Be careful to not pound too hard or long. Repeat til all beef is done. Drizzle sauce over meat in bowl and mix well.

Take one slice of beef and place on plate and place two pieces of scallion green and one piece of each pepper and roll up so peppers are sticking out of ends. Secure with one or two toothpicks.

Lightly brush grill with oil and heat until hot. Grill or broil beef rolls brushing with extra sauce and turning until med. well. 2 to 4 minutes. Cut each roll in half if you didn't cut and make smaller to begin with. Make more sauce if you want it for dipping.
