Italian Style Eye of Round Roast

1 eye of round roast
1 tsp. Italian seasoning
garlic (enough for each slit 1-inch apart, about 3 cloves)

Marinade:
1 cup red wine
1/2 cup water
1 Tbsp. cooking oil


Stick knife into roast 1-inch apart and push garlic into slits. Pour marinade over roast and leave in refrigerator overnight. Put roast in roast pan with a rack uncovered. Pour marinade over roast and bake about 2 1/2 hours at 300 degrees.

You will have to add a little water in the bottom of the roast pan as the wine evaporates quickly. Use juice to make gravy. This roast should be medium well done if you want medium rare, cut back on the time.
