Lasagna in a Bun

4 -5 sub or hoagie buns (6 inches)
1 pound ground beef
1 cup spaghetti sauce
1 teaspoon crushed garlic
2 teaspoons Italian seasoning
1 cup cottage cheese (drained) or ricotta cheese
1/4 cup grated Parmesan cheese
1 cup shredded cheddar cheese, (4 ounces) divided
1 cup shredded mozzarella cheese, (4 ounces) divided


Preheat oven to 350 degrees F. Cut buns in half lengthwise and scoop out centers, but save tops to cover sandwiches.

In a skillet, brown ground beef; drain. Add spaghetti sauce, garlic, and Italian seasoning. Cook 4 to 5 minutes or until heated through.

Meanwhile, combine ricotta, Parmesan and half of cheddar and mozzarella cheeses; mix well.

Spoon meat sauce into buns; top with cheese mixture. Then sprinkle each with remaining mozzarella/cheddar. Replace bun tops. Wrap each sandwich in foil that has been lightly sprayed with Pam. Place on a baking sheet and bake at 350° for 20 to 25 minutes.

Serving Ideas : Can serve with cottage cheese and raw baby carrots or a salad.

Notes:
Alternative directions: Cut thin slices off tops of buns. Hollow out centers, leaving 1/4 inch thick shells; discard tops and center or save for another use. Fill with everything except reserved cheddar/mozzarella. Bake 20 min. covered loosely with foil. Uncover; sprinkle with remaining cheddar and mozzarella. Return to oven for 2 to 3 minutes or until cheese melts.
