Marinated BBQ Beef Brisket

1 Tbl. flour
1 large or turkey-size oven bag

Marinade:
4 tsp. Worcestershire sauce
2 tsp. garlic salt
2 tsp. onion salt
1-2 tsp. fresh ground pepper
1-2 Tbl. liquid smoke, optional
Joe's Stuff seasoning (cajun), to taste, optional
4 lb. beef brisket

Sauce:
1 cup ketchup
4 Tbl. brown sugar
2 Tbl. lemon juice
2 tsp. ground mustard (can use yellow mustard)
5 drops hot pepper sauce


Shake flour in the oven bag; place in an ungreased 13x9 pan. Sprinkle brisket with cajun seasoning, if desired.

In a bowl combine the Worcestershire sauce, garlic salt, onion salt, pepper and liquid smoke. Rub over both sides of brisket. Place in the oven bag. Close with tie and refrigerate for 8 hours or overnight, turning occasionally.

When ready to bake, combine ketchup, brown sugar, lemon juice, mustard and hot pepper sauce; spread over brisket. Close oven bag with nylon tie; cut six 1/2 inch slits in top of bag. Return to pan. Bake at 325 degrees for about 3 hours or so, until beef is tender.

Let brisket rest for 10 to 15 minutes. Take brisket out of bag and place on cutting board.

Pour juices into a large pan and bring to a boil. Thicken with a little cold water and cornstarch, if desired. Slice meat across the grain into thin slices. Put back into pan with juices and serve.
