Marinated Beef Rump Roast
3/4 cup water
1/3 cup soy sauce
2 Tbsp. sugar
1 tsp. dried thyme, crushed
1 tsp. ground ginger
1 clove garlic, minced
3 1/2 to 4 lb. rump roast
Combine ingredients; pierce meat several times with a long tine fork. Place meat in plastic bag set in a deep bowl. Pour marinade in bag and close; refrigerate overnight, occasionally turning bag to distribute marinade.
Preheat oven to 350° F. Remove meat from bag; reserve marinade.
Put meat on rack in shallow pan, insert meat thermometer. Roast, uncovered, in a 350 degrees oven for
about 2 hours for medium doneness.
Last 30 minutes, strain remaining marinade. Heat with 2 tablespoons water; spoon over
meat slices.
Makes 8 to 10 servings.
