Surprise Meat Loaf

1 1/2 lb. lean ground beef
2 eggs slightly beaten
8 oz. can tomato sauce
1/4 cup green pepper chopped
4 oz. can sliced mushrooms drained
1 cup shredded cheddar cheese
1/2 cup seasoned dry bread crumbs
1/2 cup onion finely chopped
1 1/2 tsp. Worchestershire sauce


Preheat oven to 350 degrees F.

Combine beef, crumbs, eggs, 1/4 cup tomato sauce, onion, green pepper, salt and pepper to taste, and Worcestershire sauce in a large bowl; blend well.

Place 1/2 of beef mixture in the bottom of an ungreased, shallow 2 qt. baking dish. Shape into oval about 9 x 6 inches.

Make cavity in the center of the beef; spread mushrooms and cheese in the cavity. Place the remaining meat mixture over the top. Shape into a loaf, pinching sides together to seal in the filling.

Pour another 1/4 cup tomato sauce over the top. At this point, the loaf may be frozen for later use. To bake at once, place in a 350 degree oven and bake uncovered about 1 1/4 hours.
