Konigsberger Klopse (Konigsberg Meat Balls)

2 large , rolls
1 lb. ground meat (1/2 beef, 1/2 pork)
3 or 4 chopped anchovies
1 chopped onion
2 eggs
salt and pepper
flour
2 Tbl. butter
1 Tbl. Flour
1 cup beef stock
1/2 cup dry white wine
2-3 more chopped anchovies
juice of 1/2 lemon
1 teaspn. capers


Soak the rolls in milk or water, and squeeze them dry, mix with the meat, anchovies, onion, eggs, salt and pepper.

Knead well and shape into 8 balls. Coat the Klopse with flour, drop them into boiling salted water, and simmer about 10 minutes.

Meanwhile, in a large skillet melt the butter, mix in the flour, stir, add the stock and wine, stir, add the remaining ingredients and simmer for 10 minutes. Add the Klopse to the sauce, simmer a couple of minutes and serve.

Serves 4
