Mediterranean Meatballs in Tomato Sauce

For the meatballs:
3/4 kilo lean minced beef (maximum 11% fat)
2 red onions, chopped
2 eggs
2 dl fresh breadcrumbs -preferably from wholewheat bread
fresh oregano, basil, rosemary and thyme
1 beef stock cube
2 dl boiling water

For the sauce:
1 tin chopped tomatoes in tomato sauce
1 carton pressed tomatoes
1 red onion, minced small
1 clove of garlic, minced small
sugar, salt, dash Tabasco and Worcester sauce, and herbs mentioned above


Start with the meat. Combine all ingredients and let stand. While meatball dough stands, make the sauce.

Preheat oven into 200 °C.

Sauté the onion and garlic in a teaspoon of water for a short while, add tomatoes and let simmer at least one hour.

Start making the meatballs, take a tablespoonful of the dough and make into balls with wet hands. Place balls onto a lined baking tray and bake in the oven for 15 minutes.

Put washed small potatoes into a steaming basket until done. Take meatballs out of oven and put them into the sauce. Serve with potatoes.
