Beef Meatballs and Rice

Meatballs and Rice

1-1 1/2 lbs. ground beef
1/4 teas. nutmeg
2 teas. brown sugar
1 egg
1/2 cup diced onion
2 slices day old bread crumbed
about 1/2 cup milk- to make a rather soft meat mixture
1/2 teaspoon salt and pepper to taste


Mix all meat mixture together. Form into 1 1/2 in meatballs and roll in raw instant rice. Brown in about a tablespoon of oil until well browned. Add 1 1/2 cup beef broth or water that you have dissolved 2 boullion cubes in.

Pour over meatballs. Cover and bake at 350 for about 45-60 minutes or until the broth is absorbed by the rice.
