Jim’s Best Meatloaf

3/4 cup chopped cabbage
2 ribs celery, chopped
2 small carrots, chopped
1 large onion, chopped
4 1/2 lbs. Lean ground beef
2 pkgs. Dry onion soup
1/2 tsp. ground black pepper
4 eggs
1 pint homemade salsa, or favorite, or ketchup
1 1/2 tubes crackers
1/4 cup additional salsa or ketchup, optional


Preheat oven to 350° F.

Put chopped vegetables in food processor and process as small as you can. Put this mixture in a large mixing bowl and add beef, soup, pepper, eggs and salsa. Mix together well.

Crush crackers in food processor or by hand and add to the meat mixture.

Form into a loaf and place on a large baking dish, uncovered. Top with additional salsa id desired.

Bake for 1 3/4 hours, or until done.
