Meat Loaf
2 pounds ground beef
1 cup dry breadcrumbs
1 medium onion, chopped
1 can cream of mushroom soup
1 egg
2 tablespoons beef broth (from 14 1/2 ounce can)
Salt & Pepper, to taste
Mix together meat, breadcrumbs, onion, soup, egg, broth and seasonings. Put into loaf pan. Loosely cover with sheet of foil and bake in 350 degree oven for 1 hour, 15 minutes. Uncover and bake an additional 15 minutes.
Pour off 1 tablespoon drippings from cooked meatloaf into small saucepan. Stir in 1 tablespoon flour. Gradually wisk in remaining beef broth from can. Cook until thickened. Slice meatloaf and serve
with gravy. Tastes great with, what else, mashed potatoes!
