Beef Meatloaf: Meat Loaf by Polar Bear

Meat Loaf

2 c fresh bread crumbs (from 4 slices, crusts removed)
1/2 c fresh parsley (or cilantro)
1 med onion
2 lb ground beef (and/or lamb, veal, pork, turkey, etc.)
2 lg eggs
2 T Worcestershire sauce
2 t dry mustard
1 t salt
1/2 t black pepper
1/2 c milk


Make bread crumbs. Chop parsley and onion finely. Combine with remaining ingredients, mixing well. Press into a well greased 6 c bundt pan or a lightly greased 1-1/2 qt loaf pan.

Bake in 325 degree oven (45 minutes for tube pan; one hour for loaf pan). Cool ten minutes; remove from pan. For sandwiches, chill well and slice 1/2 inch thick.
