Chedder Meatloaves

1 egg
3/4 cup milk
1 cup shredded cheddar cheese
1/2 cup quick cooking oats
1/2 cup chopped onion
1 teaspoon salt
1 lb. lean ground beef
2/3 cup ketchup
1/2 cup packed brown sugar
1 1/2 teaspoons prepared mustard


In a bowl, beat the egg and milk. Stir in cheese, oats, onion and salt. Add beef and mix well. Shape into eight loaves; place in a greased 13 x 9" baking dish. (Line the dish with foil and spray with Pam for easy clean-up).

Combine ketchup, brown sugar, and mustard; spoon over loaves. Bake, uncovered, at 350 degrees for 45 minutes or until meat is no longer pink and reaches 160 degrees.

Serving ideas: Good with mashed potatoes and corn.




Meatloaf

1 egg
1 to 1 1/2 lbs. Extra lean ground beef
1 can cream of mushroom soup
1 package stovetop stuffing mix.


Mix egg with the ground beef and add soup and stove top mix. Bake at 350 for 1 hour.



Mushroom Meat Meatloaf

1/4 Cup Butter
1 Pound Mushrooms -- sliced
1 Minced Onions
1 Teaspoon Lemon Juice
4 Cups Soft Bread Crumbs
1 Teaspoon Salt
1/8 Teaspoon Pepper
1/4 Cup Minced Parsley
2 Eggs
3 Pounds Ground Beef
1 Tablespoon Salt
1/8 Teaspoon Pepper
1/4 Cup Milk
1/3 Cup Ketchup
1 1/2 Teaspoons Dry Mustard


For stuffing, sauté in butter all but 7 small mushrooms with lemon juice and onion for 3 minutes.

Toss bread and next 3 ingredients. Beat eggs. Lightly mix in beef, then next 5 ingredients. Pack 1/2 of the meat into a 10 x 5 x 3-inch loaf pan; pack stuffing on top, then put in remaining meat. Put 7 mushrooms o top. Refrigerate.

Preheat oven to 400 degrees and bake meat loaf 1 hour ad 10 minutes.

Can use packaged stuffing mix and just add mushrooms.
