Beef Meatloaf: Meatloaf by cowgirl

1-1/2 pounds ground "anything" (beef, pork, chicken, even fresh or canned shredded fish)
1 cup oatmeal or 3 slices decrusted bread, torn in small pieces
1 cup milk or tomato juice
1/2 tsp. dry mustard
1/4 tsp. pepper
1 tsp. salt
1 tbsp. Worcestershire sauce
1 egg or 2 egg whites
( 3 tbsp. tomato paste)
( one carrot, shredded finely)
(one bell pepper, chopped finely)
(one cup cheese, shredded)
1/2 cup ketchup


Ingredients in brackets are optional!

Mix everything together but rely on your eye. If mixture seems too dry add a little more liquid, if too slack a little more breadcrumbs or oatmeal. Shape into loaf or put in loaf pan, smooth surface with wet hands. Bake at 350-375° for 1 - 1-1/4 hours. Let stand 5 minutes before slicing.

Leftovers = great sandwich topping
