Midway Cafe's Meatloaf

3-1/2 pounds ground beef
2-1/2 cups bread crumbs
3/4 cup milk
4 eggs
1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 teaspoon chopped jalapeno
2 tablespoons yellow mustard
4 tablespoons ketsup (2 tablespoons reserved)
salt and pepper


Saute' onion, bell pepper, jalapeno just until sweated through. Mix all ingredients, except the reserved ketsup together until well incorporated. Top with reserved ketsup. Refrigerate at least 3 hours, or overnight.
Bake 350 for 2 hours. You may want to add more ketsup to the top.
