Cheese Stuffed Meatloaf

1 Pound Ground Beef
1/2 Pound Ground Pork
1/2 Pound Ground Veal
2 Eggs
1/2 Cup Seasoned Bread Crumbs
1 Cup Tomato Juice
1/2 Teaspoon Salt
To Taste Pepper
1 Teaspoon Oregano
1 Clove Minced Garlic
1 Teaspoon Basil
2 Small Onion, Minced
Olive oil
1/2 Pound Mozzarella, shredded
8 Thin Boiled Ham Slices


Preheat oven to 325.

Combine meat, eggs, bread crumbs, tomato tuice, salt, pepper, garlic, oregano and basil.

Saute onions in a little oil and add to meat mixture. Mix well. Turn meat mixture out onto a sheet of aluminum foil and flatten into a rectangle 1" thick.

Place ham slices on meat, leaving 1" around edges. Sprinkle shredded cheese on ham. Using foil, roll meat like a jelly roll. Seal edges.

Place roll in a baking pan, seam side down. Bake for 1 hour to 1 hour and 15 minutes.

Mushroom Stuffed Meatloaf

1/4 Cup Butter
1 Pound Mushrooms, sliced
1 Tbsp. Minced Onions
1 Teaspoon Lemon Juice
4 Cups Soft Bread Crumbs
1 Teaspoon Salt
1/8 Teaspoon Pepper
1/4 Cup Minced Parsley
2 Eggs
3 Pounds Ground Beef
1 Tablespoon Salt
1/8 Teaspoon Pepper
1/4 Cup Milk
1/3 Cup Ketchup
1 1/2 Teaspoons Dry Mustard


Prepare stuffing: Saute all but 7 mushrooms with lemon juice and onion for 3 minutes. Reserve.

Toss bread with next 3 ingredients. Set aside.

Beat eggs. Lightly mix in beef, reserved bread mixture, then next 5 ingredients.

Place half of meat in a 10 by 5 by 3" loaf pan. Add stuffing, then remainder of beef mixture. Place 7 reserved mushrooms on top of meatloaf. Refrigerate until chilled.

Preheat oven to 400. When oven is hot, bake for 1 hour and 10 minutes.
