Meat Loaf in Sour Cream Pastry

Pastry:
2 1/4 Cups Flour
1 Tsp. Salt
12 Tbsp. chilled butter cut into 1/4" bits
1 Egg
1/2 Cup Sour Cream
1 Tbsp. Soft Butter


Sift flour and salt together into a large chilled bowl. Drop 1/4" bits of butter into bowl. Working quickly, use your fingertips to rub flour and butter together until they have appearance of flakes of coarse meal.

In a separate bowl, mix together egg and sour cream and stir into flour/butter mixture, mix with fingers until you can gather dough into a soft, pliable ball. Wrap in wax paper and refrigerate 1 hour.

Cut chilled dough in half and roll out each half to rectangles of 6X14" each, setting aside any scraps.

Butter bottom of a loaf pan with 1 tbsp. soft butter. Lift 1 sheet of pastry over a rolling pin and unroll into a pan.

Meat Filling:
4 Tbsp. Butter
3/4 Cup finely chopped mushrooms
3 lbs GroundBeef, Pork, Ham, Lamb, or combination
2 Tbsp. Flour
1/3 Cup finely chopped onion
1/4 Cup finely chopped parsley
1 Cup grated Cheddar or Swiss Cheese
1/2 Cup Milk
1 egg with 2 Tbsp. milk


Preheat oven to 375.

Melt butter in a skillet. When foam subsides, add mushrooms and cook, stirring frequently, for 6-8 minutes (or until lightly browned if using raw meat).

Stir in flour. Scrape meat from skillet into mixing bowl and stir in onions, parsley, cheese, and milk. Gather into a ball and place in center of dough in pan. Pat meat into a narrow loaf length of dough.

Lift second sheet of dough with rolling pin and gently drape on top of meat. Press edges of 2 sheets of dough together. Dip pastry brush into combined egg and milk mixture and moisten edges of dough. Press down on edges all around with back of a fork. Prick top of loaf to allow steam to escape.

Gather all dough scraps, roll, cut and form several narrow strips. Brush loaf with more egg mixture and crisscross pastry strips over top of loaf. Brush loaf overall with last of egg mixture and bake for 45 minutes.

Serve topped with sour cream.
