Meatloaf Made with Oats

1 package (about 1 pound) extra lean ground beef
1 package (about 1 pound) lean ground pork*
1 medium onion, finely diced
2 cloves garlic minced
1/4 to 1/2 tsp. black pepper (to taste)
1/4 cup zippy barbeque sauce
1 egg
1/2 cup of oatmeal


Preheat oven to 400 degrees. Grease two 9x5" loaf pans.

In a large bowl blend meats together until well mixed. Set aside.

In a small fry pan, saute onions in a bit of oil until translucent. Add garlic and saute about one minute more, stirring gently, until you can start to smell the garlic cooking.

Stir into meat mixture along with remaining ingredients; mix well. The meat should hold together "smoothly" if it doesn't, give it a couple extra squirts of the Barbeque sauce and stir well.

Divide meat mixture evenly into the two pans and bake for 1 hour. The loaves should be well browned on top. Each loaf should serve 4 people.

*NOTE: if you can't get unseasoned ground pork, a package of Jimmy Dean's sausage meat is an excellent subsitute.
