Mexican Meatloaf

Mexican Meatloaf

2 lb. lean ground beef or 1 lb. beef and 1 lb. Turkey
2 lightly beaten eggs
1 small onion
1 cup dry bread crumbs or 2 slices bread
1 1/2 cup grated cheddad cheese
1 1/2 cup salsa
3 slices bacon
Salt and pepper to taste


Preheat oven to 350 degrees F.

Reserve 1/2 cup of cheese and 1/2 cup salsa. Combine all ingredients. Shape into meatloaf and place in large baking pan .

Bake at 350 degrees for 1 1/2 hours or until done. 1/2 hour before it is done, drain off grease put bacon, salsa, and cheese on top. Bake for 1/2 hour more. Makes 6 to 8
