Minute Steak Mexicana

2 eggs
1/4 cup milk
2 tsp. oil
3/4 cup flour
4 beef cube steaks (1 lb.)
3 tbl. oil
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tbl. butter
1 (10 oz.) can tomatoes and green chilies
1 cup cubed American cheese


Combine eggs, milk, and the 1 tsp. oil. Stir together flour, 1/4 tsp. salt, and 1/4 tsp. pepper.

Dip meat in flour, egg mixture, then flour again.

Heat the 3 tbl. oil in large skillet. Add meat, cook over medium heat 8-10 minutes on each side. Remove to platter; keep warm.

Cook the 1/2 cup onion, green pepper, and 1/4 tsp. pepper in 1 tbl. butter till tender. Add undrained tomatoes; heat through. Stir in cheese till melted. Pour over steaks.

Serves 4
