Microwaved Corned Beef
1 (3 - 4 lb.) corned beef brisket
2 cups water
Place brisket, fat side up, in a 4-qt. microwavable casserole with lid. Pierce meat several times with a meat fork or skewer. Add water and cover.
Cook on high for 10 - 15 minutes, or until water comes to a rolling boil. Turn brisket over, cover and cook on medium for 25 - 30 minutes. Turn brisket over again (add veggies at this point, if desired) and continue cooking on medium heat for another 30 minutes.
Let stand covered for 10 minutes before serving.
For glazed corned beef:
Prepare as above. After meat is done, combine in a small bowl:
1/3 Cup apricot or peach preserves
1 1/2 Tbl. Dijon mustard
1 1/2 Tbl. brown sugar
1/4 tsp. ground cinnamon
1 1/4 tsp. ground ginger
Mix well.
Place brisket fat side up on a microwavable platter. Spread glaze over cooked corned beef. Cook on high for 5 minutes, uncovered.
Let stand for 10 - 15 minutes before slicing. Baste with any remaining glaze or juices.
