Mom’s Ranch Style Beans
2 lbs. pinto beans (4 cups, washed and soaked)
2 large onions, diced
4 or less garlic cloves, diced
2 tsp. salt
1 tsp. pepper
1 jar green taco sauce
1 (14.5 oz) can whole roasted green chilies, cup up
1 large can tomatoes
1 Chile brick
2 lbs. ground beef
Soak beans overnight. Drain, wash and cover with about 2 inches water and boil over moderate heat for about an hour. Add remaining ingredients and simmer 11/2 or 2 hours until tender. (Add, if you wish, 2 or 3 bell peppers, 4 carrots and 4 stalks celery.)
