Oven Chuck Roast

2 tbsp. bacon drippings or cooking oil
4-5 lb. chuck roast, or 3-4 lbs. short ribs
1-1/2 tbsp. butter
1 medium onion, chopped
1-1/2 tbsp. Worcestershire
2-3 tbsp. vinegar (or more to taste)
3-4 tbsp. brown sugar (or more to taste)
1-1/2 tsp. dry mustard
3/4 tsp. salt
3/4 cup water
1 cup chili sauce
Dash of Tobasco sauce


Remove as much fat from meat as possible. Heat drippings or oil in heavy skillet; brown meat on all sides.

Meanwhile, prepare sauce: Melt butter in saucepan; brown onion. Add remaining ingredients; simmer for 10 minutes.

Preheat oven to 325 degrees.

Place meat in baking dish; pour sauce over meat. Cover; cook in preheated oven for 2-1/2 hours, or until tender, basting and turning several times.
